TOMATO AND BANANA SALAD

2 ripe bananas
1 tablespoon lemon juice
1 lb. firm tomatoes
3 tablespoons balsamic vinegar
5 tablespoons sunflower oil
1 teaspoon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon curry powder
1 teaspoon sugar
1 bunch flat-leafed parsley

Peel bananas and cut into slices, sprinkle with lemon juice.  Peel tomatoes, cut into halves to take out the seeds, then cut into slices.  Carefully mix with the banana slices.  For the dressing, mix vinegar, oil and mustard and season to taste with salt, pepper, curry and sugar.  Pour over the salad and toss carefully.
Sprinkle with chopped parsley.
