SWABIAN POTATO SOUP
2 or 3 potatoes, peeled and thinly sliced
1 small onion, chopped
1 - 2 tablespoons butter
1 to 2 cups diced cooked beef
8 cups beef broth
Salt and pepper to taste
Leftover gravy (optional)
2 cups cooked spätzle
Cook potatoes and onion in butter until onion is yellow. Add cut-up meat and broth and any
leftover gravy that may be around. Add salt as needed. Simmer until potatoes are very
soft. Season to taste (salt & pepper). Add spätzle. Makes 8 servings.
