HERINGSALAT
(Herring Salad)
8 oz. pickled herring, drained
1/2 green pepper, seeded and diced
1 tart apple, cored and diced
1 orange, sectioned and diced
2 teaspoon onion, grated
2 tablespoon vegetable oil
1 tablespoon vinegar
4 lettuce leaves, cupped
Combine ingredients and marinate in refrigerator for at least 1 hour. Serve on inner
tightly cupped lettuce leaves.
Serves 4.
