ZUCCHINI RELISH
10 cups coarsely ground zucchini
4 sweet red peppers
3 small green peppers
4 cups coarsely ground onion (about 2 lbs.)
5 tablespoons salt
1 teaspoon nutmeg
1 teaspoon turmeric
1 teaspoon dry mustard
1 tablespoon celery seed
1 tablespoon cornstarch
5 cups sugar
2 1/2 cups vinegar
cayenne pepper (optional)
Wash and seed zucchini, grind coarsely. Add peppers and onions, also coarsely ground. Add salt and let sit overnight. In morning, drain and rinse with cold water.
In a kettle, combine nutmeg, turmeric, cornstarch, dry mustard, celery seed, sugar and white vinegar. Bring to a boil. Add drained zucchini. Cook 15 minutes, stirring often.
Place in sterilized hot jars and seal. Cook 5 minutes in boiling water bath.
