REIS NACH FÜRST TRAUTMANSDORFF
(Rice A La Prince Trautmansdorff)

70 grams short grain rice
250 ml heavy cream
250 ml milk
2 tablespoons sugar
4 gelatin leaves
200-300 grams fruit (pears, berries, grapes, etc.)
Vanilla sugar
Pinch of salt
Maraschino liqueur or cognac
Whipped cream
Candied fruit or fruit puree

First, rinse rice and cook in 1 liter of water for 6-7 minutes, drain, add cold milk and bring to a boil. Stir in a pinch of salt and the vanilla sugar. Steam until tender (ideally in an oven at approx. 285 F) In the meantime, finely chop the fruit and marinate in the alcohol. Soften the gelatin leaves in water, press out and stir into the hot rice along with the sugar. While the rice is cooling, whip the cream until it peaks. Shortly before the rice beings to clump, combine with the marinated fruit. Place the rice into small soufflé dishes which have been rinsed with cold water and let cool for several hours. Before serving, turn over the soufflé dishes to dislodge the rice. Garnish with whipped cream, candied fruit or fruit puree as desired.
