GEBACKENE MÄUSE
(Fried Mice - Fried Yeast Buns)

Yeast dough:
500 grams (1 lb.) flour
10 grams (1/3 oz.) dried yeast or 30 grams (1 oz.) fresh yeast
50 grams (2 oz.) sugar
1 teaspoon salt
50 grams (2 oz.) butter
1/4 liter (8 fluid oz.) milk
2 eggs
3 tablespoons rum
100 grams (3 1/2 oz.) raisins

Dough: Put the flour in a bowl. Mix in yeast, sugar and salt. Melt butter, add milk and beat in the eggs. (The liquid should be lukewarm). Pour this mixture into the flour. Mix to a dough and beat hard for 10 minutes. Work raisins into the dough. Leave to rise in a warm place until double its original bulk. lace the dough on a floured board, knead well.

After rising, scoop out little buns. Fry them floating in hot fat until golden brown all over. Allow to drain. Sugar and serve.
